Yield: Serves 8 to 10
| 1 | Pie crust for double crust 10-inch pie | |
| 8 | eggs | |
| 1 | lb. | lean ham |
| 1-1/2 | lbs. | fresh Basket* cheese |
| 1 | lb. | mozzarella cheese |
| 2 | Tablespoons | grated Parmesan cheese |
In large bowl beat eggs, add ham, Basket cheese, Mozzarella cheese, and Parmesan cheese. Pour mixture into bottom crust in 10-inch pie dish. Cover with vented top crust and flute edges.
Bake at 350 F. approximately 1 hour or until crust is golden.
*Basket cheese is very mild and slightly salted, is made from cow's milk, and has a basket-like appearance, hence it's name. This cheese can be enjoyed alone, added to an antipasto platter, or prepared in many types of food pies and pasta dishes. Basket cheese can also be referred to as "Formagetto".
